  • 8 thin beef sausages
  • 400grams four seasons coleslaw kit
  • 425grams can Mexican style 3 bean mix no added salt, drained, rinsed
  • 420grams can sweet corn kernels, drained, rinsed
  • 1 large avocado, sliced
  • 2 spring onions, sliced

Description

This warm beef-sausage salad has all the right ingredients for a stress-free midweek dinner: it’s easy to make, filling and full of flavour.

Method

Step 1 of 3

Heat a large non-stick frying pan over medium-high heat. Add sausages and cook, turning occasionally, for 8 minutes or until cooked and browned. Remove from heat. Cool slightly. Slice.

Step 2 of 3

Place the coleslaw kit in a large bowl. Add beans, corn and sausages. Add dressing from the kit. Toss to combine.

Step 3 of 3

Spoon salad into serving bowls. Top with avocado. Serve sprinkled with spring onion.
