  • 1tablespoons extra virgin olive oil
  • 500grams Italian-style pork & fennel sausages, casings removed
  • 1 rindless middle bacon rasher, roughly chopped
  • 1 brown onion, finely chopped
  • 3 cloves garlic, crushed
  • 500grams potatoes brushed, peeled, washed, roughly chopped
  • 1L salt-reduced chicken stock
  • 2/3 cup light thickened cream
  • 100grams baby spinach & kale
  • 40grams parmesan, finely grated

Description

Bring some international flair to the table with this Tuscan-inspired potato soup. Creamy and silky, the humble spud never tasted so fancy.

Method

Step 1 of 3

Heat oil in a large saucepan over medium-high heat. Cook sausage mince for 5 minutes, breaking up lumps with a wooden spoon, or until browned. Add bacon, onion and garlic, then cook for 5 minutes, stirring, or until onion has softened.

Step 2 of 3

Add potato, stock and cream, then bring to the boil. Boil, uncovered, for 12 minutes or until potato is tender. Using potato masher or back of a large spoon, roughly mash potato until soup has thickened slightly. Season.

Step 3 of 3

Stir in power greens and half of the parmesan until greens have wilted. Ladle soup into bowls and season with pepper. Serve topped with remaining parmesan.
