  • 1 cup self-raising flour, sifted
  • 2 free range eggs, lightly beaten
  • 1/2 cup soda water, chilled
  • 100grams haloumi, coarsely grated
  • 3 spring onions, thinly sliced (plus extra to serve)
  • 1/4 cup continental parsley, leaves chopped
  • 2 cup sweet corn kernels
  • 1/3 cup vegetable oil
  • tomato relish (to serve)

Description

Grated haloumi takes these golden, crispy corn fritters to new heights. Try them today - they could become your new favourite breakfast or easy lunch recipe.

Method

Step 1 of 4

Whisk flour, egg and soda water in a large bowl until smooth and combined. Stand for 10 minutes. 

Step 2 of 4

Fold in haloumi, onion, parsley and corn.

Step 3 of 4

Heat oil in a large, deep frying pan over medium-high heat. Place 4 x 1/4 cups mixture in pan. Cook for 4 minutes on each side or until golden and cooked through. Transfer to a wire rack set over a baking tray. Repeat with remaining batter, adding more oil, if necessary.

Serve fritters with extra onion and relish.
