  • 1kilograms chicken thigh cutlets, skin on

  • 500grams brushed potatoes, peeled, washed, halved
  • 3/4 cup Woolworths milk
  • 50grams olive oil-based spread
  • 1 bunch steamed halved broccolini (to serve)
  • 2tablespoons continental parsley leaves (to serve)

Description

A maple and lemon glaze adds zing and a hint of sweetness to this chicken recipe. Serve it up at your next dinner with creamy mash and crunchy broccoli.

Method

Step 1 of 4

Preheat oven to 210°C/190°C fan-forced. Line a large baking tray with sides with baking paper. Combine lemon juice, syrup, oil and oregano in a large bowl. Add chicken, lemon slices and garlic, then toss to coat.

Step 2 of 4

Place chicken, skin-side up, and lemon slices on tray in a single layer. Bake for 1 hour or until chicken is cooked through.

Step 3 of 4

Meanwhile, place potato in a medium saucepan and cover with cold water. Bring to the boil over medium heat, then reduce heat to low and simmer for 15 minutes or until very tender. Drain. Press potato through a fine sieve or potato ricer.

Step 4 of 4

Heat milk and spread in a small saucepan over low heat until almost boiling. Pour milk mixture over potato and stir to combine. Divide mash among plates. Top with chicken, lemon slices and broccolini. Spoon over sauce from tray. Scatter over parsley and season with pepper. Serve.
