- 1tablespoons thickened cream (to serve, optional)
- 50grams butter, chopped
- 4 pink lady apples, peeled, cored, cut into quarters
- 1/3 cup caster sugar

Method
Step 1 of 6
Preheat oven to 190°C. Layer pastry sheets on top of each other and trim corners to make a rough circle.

Evenly spread sugar over the base of a 20cm frying pan. Place over high heat until sugar begins to melt. Tilt and swirl pan occasionally to evenly melt syrup as it begins to caramelise. Do not stir. Cook for 1-2 minutes or until evenly coloured to a rich caramel. Add butter and swirl to combine.

Remove from heat and arrange apples into caramel, fitting them snugly together.

Lay pastry over apples and quickly tuck edges down into side of pan with a spoon.
Step 5 of 6
Make a few steam holes in the top. Transfer to oven and bake for 25 minutes or until pastry has puffed and turned golden.
Step 6 of 6
Remove tarte from oven and loosen edges with a knife. Cool for 2 minutes. Invert a large serving plate over pan and carefully flip over to turn out the tarte tatin. Serve hot with thickened cream, if you like.
