  • 125grams marie biscuits
  • 500grams cream cheese
  • 150grams butter
  • 1/3 cup demerara sugar
  • 1/3 cup lemon juice
  • 2tablespoons bourbon
  • 250grams pkt ginger nut biscuits
  • 397grams sweetened condensed milk
  • 2tablespoons rum
  • 300milliliter thickened cream
  • fruit compote

Method

Step 1 of 3

Line the base of a 22cm springform tin with baking paper. Break biscuits into a food processor and add sugar. Process until fine crumbs. Add butter and process until combined. Press biscuit mixture over base and side of prepared tin. Chill while you prepare filling.

Step 2 of 3

Process cream cheese, condensed milk and lemon juice in processor until smooth. Add bourbon and rum and process until combined. Fold in cream. Pour into crust and smooth surface. Chill for 6 hours or overnight.

Step 3 of 3

Transfer cheesecake to a serving plate. Top with fruit compote, to serve.
