  • 2 cloves garlic, peeled and minced

  • 1/2teaspoons baking powder
  • 1 lemon, 1 tsp zest
  • 3/4 cup canola oil

Description

Classic falafel is hard to beat, delicious stuffed in a pita or on a salad.

Method

Step 1 of 3

Tip half of the chickpeas plus 1 tablespoon of the liquid into a food processor and blitz until smooth. Add the onion, garlic, spices and fresh herbs, half of the flour, baking powder and lemon zest and blitz until incorporated.

Step 2 of 3

Tip in the remaining chickpeas and liquid as necessary. Pulse to a coarse mix. Spoon the mix into a large bowl and chill in the fridge for 30 minutes.

Step 3 of 3

Shape into 16 falafel patties with your hands and dust each side with the remaining flour. Heat the oil in a deep pan and shallow fry the falafels for 2-3 minutes on each side until golden and crisp. Drain on kitchen paper and serve.
