- 400grams chickpeas
- 75grams beetroot, ready cooked
- 1 medium red onion, peeled and sliced
- 2 cloves garlic, peeled and minced
- 1teaspoons cumin
- 1teaspoons ground coriander
- 1/2 bunch parsley, fresh
- 1/2 bunch coriander, fresh
- 50grams plain flour
- 1/2teaspoons baking powder, frozen
- 1/2 lemon, juice and zest
- 1teaspoons spray oil

Description
Add extra goodness and vibrant colour to your falafel with beetroot.
Method
Step 1 of 3
Tip the chickpeas plus 1 tablespoon of the liquid into a food processor and blitz until smooth. Add the beetroot, onion, garlic, spices and fresh herbs, flour, baking powder and lemon zest and juice and blitz until incorporated.
Step 2 of 3
Pre-heat the oven to 180°C/160°C fan-forced. Shape the mix into 16 falafel patties with your hands. Place the patties on a lined baking sheet and spray with oil on both sides.
Step 3 of 3
Bake for 30 minutes until crisp.
