  • 125grams can corn kernels, rinse, drained
  • 1tablespoons extra virgin olive oil
  • 1/2 cup shredded tasty cheese
  • 2tablespoons tomato paste

Description

Impress loved ones with a hearty cottage pie made with juicy beef mince, veggies and cheesy mash. This easy recipe makes a cosy midweek dinner.

Method

Step 1 of 3

Place potatoes into a saucepan and cover with cold water. Bring to the boil over high heat. Cook for 12-15 minutes or until tender. Drain and return to pan. Add milk and butter and mash potatoes over low heat until smooth. Season.

Step 2 of 3

Meanwhile, heat oil in a frying pan over medium heat. Add onion, carrot and celery. Cook for 3 minutes or until soft. Add mince and cook, stirring to break up any lumps, for 5 minutes or until browned. Add paste, tomatoes and 1/3 cup water. Stir and bring to the boil. Reduce heat and simmer, for 10 minutes or until mixture thickens. Stir in corn and peas.

Step 3 of 3

Preheat grill on high. Transfer mince mixture to a 2L (8-cup) capacity baking dish. Spread mash over mince mixture. Sprinkle with cheese, then grill for 5 minutes or until golden. Serve.
Instruction tip
TIP:

Make double the quantity of the mince mixture. Spoon cooled mixture into a storage container, label, date and freeze for up to 3 months. Thaw in fridge overnight.
