- 2 sheet frozen shortcrust pastry
- 2 sheet frozen puff pastry
- 2tablespoons plain flour
- 1tablespoons tomato paste
- 2 bay leaves
- 2 carrots, peeled, chopped
- 150grams mushrooms, sliced
- 1 brown onion
- 1tablespoons parsley, finely chopped
- 1tablespoons wocestershire sauce
- 1 cup beef stock
- 1/4 cup olive oil
- 1 egg, lightly whisked
- 1 stick celery, sliced
- 500 lean rump steak, cut into 2cm cubes

Method
Step 1 of 4
Heat 1 tbs of oil in a frying pan over a medium-high heat. Cook onions, carrot and celery for 2-3 minutes. Add mushrooms and cook for 2 minutes or until soft. Transfer vegetables to a bowl.
Step 2 of 4
Toss steak in flour. Add remaining oil to pan. Cook meat in batches for 5 minutes until well browned. Transfer to bowl.
Step 3 of 4
Add stock, sauce, paste and herbs to pan. Season. Bring to boil. Return meat and vegetables to pan and stir well to combine. Reduce heat to low. Simmer for 20 minutes until meat is tender.
Step 4 of 4
Preheat oven to 200°C. Line 4 x 1 1/2 cup ovenproof pie dishes with shortcrust pastry and trim off excess. Divide meat mixture among pastry cases. Cut 4 lids from puff pastry sheets. Brush edges of pastry with water. Place pastry lids on top of cases. Press edges to seal. Brush pie tops with egg. Bake for 25-30 minutes or until puffed and golden. Serve with sauce and vegetables.
