  • 800grams sweet potato, peeled, cut into 2cm chunks
  • 1/4 cup milk
  • 3/4 cup shredded tasty cheese
  • 1tablespoons extra virgin olive oil
  • 400grams COOK simmer veggie mix
  • 500grams lamb mince
  • 1/4 cup salt-reduced instant gravy mix
  • 410grams canned crushed tomatoes
  • 1/4 bunch continental parsley, leaves picked, finely chopped

Description

Put a twist on shepherd's pie with creamy mashed sweet potato. Gold sweet potato adds a hint of sweetness and a pop of colour to this mouth-watering dish.

Method

Step 1 of 4

Preheat oven to 220°C/200°C fan-forced.

Step 2 of 4

Cover sweet potato with water in a medium saucepan, then bring to the boil over medium-high heat. Boil for 15 minutes or until tender. Drain. Return to pan and add milk and 1/2 cup cheese. Mash until smooth. Season with pepper.

Step 3 of 4

Meanwhile, heat oil in a large frying pan over high heat. Cook mince, breaking up lumps with a wooden spoon, for 4 minutes or until browned. Add veggie mix and cook for 4 minutes or until slightly softened. Sprinkle over gravy mix and stir to combine. Add tomatoes and cook, stirring, for 2 minutes or until thickened slightly. Season with pepper.

Step 4 of 4

Spoon mixture into a 16 x 30cm (6cm deep) baking dish. Top with mash and spread to cover. Sprinkle over remaining cheese. Bake for 20 minutes or until cheese has melted and lamb mixture is bubbling around edges. Stand for 10 minutes. Serve sprinkled with parsley.
