  • 625grams latina fresh tortellini veal
  • 1/2 bunch basil, leaves picked, torn
  • 250grams fresh broccoli, finely chopped
  • 1 carrot, finely chopped
  • 1 small eggplant, finely chopped
  • 1 fresh leek, thinly sliced
  • 4 roma tomato, chopped
  • 1 zucchini, finely chopped
  • 2tablespoons tomato paste
  • 1/2 cup parmesan cheese, finely grated
  • 500grams lean beef mince
  • 700grams passata
  • 3 clove garlic, crushed

Method

Step 1 of 2

Heat oil in saucepan over medium heat. Add the leek and garlic. sauté until soft. Add tomato paste, cook stirring 1 minute. Increase heat to high. Add beef mince, stir to break up the lumps. Cook for 5 minutes until browned. Add the vegetables, cook, stirring occasionally for 10 minutes until just softened. Add the passata, bring to the boil, reduce heat medium and simmer for 20-30 minutes until sauce thickened.

Meanwhile, cook the pasta following to the packet directions until al dente. Drain and return to hot pan. Add Bolognese, season and stir to combine. Stir in the basil and parmesan. Serve.
