Description
Chocolate chips, sprinkles and crispy coconut crunchies elevate this fun, moreish version of a classic afternoon staple.
Method
Step 1 of 3
To make the dipping sauce, whisk together cream cheese and icing sugar in a small bowl until well combined. Transfer to a small serving bowl and add sprinkles.
Step 2 of 3
Place eggs in a wide shallow bowl. Combine coconut and breadcrumbs in another wide, shallow bowl.
Step 3 of 3
Fill a deep-sided frying pan with oil to 1cm depth. Heat over medium heat until surface shimmers. Toss a piece of banana bread briefly in egg mixture, then coat in coconut mixture and fry for 1 minute on each side or until breadcrumbs are just golden. Drain on paper towel and repeat with remaining banana bread, egg and coconut mixture. Serve fries warm with dipping sauce.
