For the pudding
- 3/4 cup plain flour
- 1/2 cup port
- 160grams butter, chopped
- 250grams cherries, pitted, roughly chopped
- 200grams good-quality dark chocolate, roughly chopped
- 2tablespoons dutch cocoa
- 1 cup almond meal
- 3 eggs
- 1/2 cup brown sugar, firmly packed

- 125grams thickened cream
- 200grams good-quality dark chocolate, chopped

Method
Step 1 of 8
Place cherries and port into a saucepan and bring to the boil over medium heat. Simmer for 5 minutes until cherries have softened. Remove from heat and cool.

Preheat oven to 160°C. Grease 6 x 1-cup capacity mini pudding bowls and line bases with baking paper. Lay a tea towel into the base of a roasting pan and sit bowls on top.

Stir chocolate and butter in a heatproof bowl over a saucepan of simmering water until melted and smooth. Cool.

Beat eggs and sugar in a bowl with electric beaters until light and creamy. Sift flour and cocoa over egg mixture and stir in with almond meal. Add chocolate and cherry mixtures and stir gently until combined.

Divide mixture evenly between bowls and smooth tops. Pour enough hot water into roasting pan to come halfway up the sides of the bowls.

Bake for 35 minutes or until puddings are cooked through when tested in the centre with a skewer.

Meanwhile, to make chocolate sauce, heat cream in a small pan over medium heat until small bubbles form around the edge. Remove from heat, add chocolate and stir until melted and smooth.

Stand puddings for 5 minutes. Turn out onto serving plates. Serve with chocolate sauce spooned over and topped with a fresh cherry.
