  • 2teaspoons milk
  • 2/3 cup pure icing sugar
  • 80grams unsalted butter, softened
  • 2tablespoons mint leaves (to garnish)
  • small strawberries (to garnish)
  • 1/4packets mini meringues
  • 1/4 cup strawberry jam

Method

Step 1 of 3

You will need 1/2 a quantity of shortbread dough for this recipe. Preheat oven to 160°C. Line a baking tray with baking paper. Prepare shortbread mixture and roll out to 4mm thick. Cut out rounds using fluted 4.5cm and plain 3cm cutters.

Transfer to tray and bake 8-10 minutes or until pale golden. Transfer to a wire rack and cool completely.

Step 3 of 3

Meanwhile, beat butter until creamy. Beat in icing sugar until smooth. Stir in milk. Spread half the biscuits with a little jam and remainder with buttercream. Sandwich together. Arrange biscuits, meringues, crushed meringues, strawberries and leaves in a wreath shape on a large board. Dust with icing sugar and scatter with mint and serve.
