- 200grams glace cherries, chopped

Description
Discover our Christmas ice cream pudding, a creamy and festive dessert that is sure to be a hit at any holiday gathering. Top off your Christmas meal right.
Method
Step 1 of 7
Lightly grease and line a 10-cup capacity glass bowl with plastic wrap.
Step 2 of 7
Remove 2 cartons of ice-cream from freezer and stand at room temperature until softened. Do not melt completely.
Step 3 of 7
Spoon into a large bowl. Add cherries, pistachios and stir until well combined. Transfer to prepared bowl, spreading around over the surface and leaving the centre empty. Lightly brush the outside of a 4-cup capacity bowl with oil. Place into the centre of the larger ice-cream lined bowl. Freeze for about 1 1/2 hours or until very firm.

Remove inner bowl and return large bowl to freezer. Remove the remaining carton of ice-cream from freezer and stand until softened.
Step 5 of 7
Place strawberries, raspberries and icing sugar into a food processor. Process to a purée. Transfer softened ice cream to a large bowl. Add puréed fruit and stir well to combine. Spoon into the cavity formed by the smaller bowl. Return to the freezer until solid.
Step 6 of 7
To serve: Remove from freezer and place bowl upside down onto serving platter. Rub a warm wet cloth over outside bowl to loosen. Gently ease pudding from bowl. Remove plastic wrap.

Decorate with strawberries and dust with icing sugar.
