Fruit Mince
  • 2 cups mixed dried fruit
  • 150grams glace cherries, halved
  • 1/2 cup Woolworths soft & juicy pitted dates, roughly chopped
  • 1/2 cup dark brown sugar
  • 1/2 cup whisky
  • 1/3 cup orange marmalade
  • 1teaspoons mixed spice
  • 1/2teaspoons ground cinnamon
  • 1 Granny Smith apple, cored, grated
  • 2 Woolworths free range eggs, lightly beaten
  • 100grams butter, melted, cooled
  • 1 cup self-raising flour
  • 1/2 cup fresh white breadcrumbs
  • 1 1/2 cups caramel sauce (to serve)

Tip:
You can make this Christmas pudding up to two months in advance. If you’re making this pudding in an aluminium basin, remove the pudding from it and place the pudding in an airtight container before refrigerating.

Method

Step 1 of 5

To make the fruit mince, place all the ingredients in a large bowl. Stir until well combined. Cover and stand overnight or up to 1 month (see tips).

Tip:
Make your fruit mince up to one month* ahead. Store in an airtight glass or ceramic container in a cool, dark place. Avoid using a metal bowl as it may taint the flavour.

Step 2 of 5

Grease an 8-cup capacity metal pudding basin with a lid. Line base with 2 sheets of baking paper. Grease inside of lid.

Stir apple and egg into fruit mince. Add butter and stir to combine. Add flour and breadcrumbs, then stir to combine. Spoon mixture into basin. Level top. Tap pan gently on bench to remove any air bubbles. Level top and secure lid.

Step 4 of 5

Place basin in a large saucepan. Pour boiling water into saucepan until it comes halfway up side of basin. Cover saucepan, then place over medium heat and bring to the boil. Boil for 5 hours, adding boiling water, if needed. Remove pan from heat.

Step 5 of 5

Carefully lift basin from water. Stand for 10 minutes. Remove lid. Turn out pudding onto a platter. Serve drizzled with caramel sauce.
