  • 500grams Philadelphia cream cheese
  • 40grams butter
  • 3 Cadbury flake bars
  • 125grams fresh raspberries to decorate
  • 1 cup frozen raspberries
  • 2 Oreos
  • 1L ice cream
  • 1 cup pistachios
  • 1/4 cup coconut oil
  • 225grams Cadbury dark chocolate melts

Method

Step 1 of 10

Line an 8 cup capacity pudding basin with plastic wrap.

Step 2 of 10

Using an electric mixer, beat cream cheese for 5 minutes until light and fluffy. Add ice cream and continue to beat until combined.

Step 3 of 10

Roughly crush one packet of Oreo cookies. Set aside the remaining packet. Fold raspberries, pistachios, flake and oreos into ice cream mix.

Step 4 of 10

Pour mixture into prepared basin. Freeze for 30 minutes.

Step 5 of 10

Place remaining Oreo cookies in food processor. Process until fine crumbs form. Add butter. Process until combined.

Step 6 of 10

Spoon over top of ice cream, pressing with the back of a spoon to level. Cover with plastic wrap and freeze overnight.

Step 7 of 10

Turn pudding onto chilled serving plate.

Step 8 of 10

Melt dark chocolate melts in a microwave safe bowl on medium heat for 2 minutes. Stir in oil and mix well.

Step 9 of 10

Drizzle the melted chocolate over the pudding. Decorate with flake and fresh raspberries.

Step 10 of 10

Serve immediately.
