Christmas Fruit Pudding With Cream

- 150grams gluten-free suet
- 4tablespoons brandy
- 4tablespoons apple juice
- 1 orange, grated rind
- 120milliliter thick cream (to serve)
- 2tablespoons rice flour
- 200grams gluten-free fresh breadcrumbs
- 200grams soft dark brown sugar
- 500grams mixed sultanas, raisins and currants
- 100grams ready-to-eat dried apricots, chopped
- 2teaspoons mixed spice
- 1 apple, grated
- 2 eggs
Method
Step 1 of 4
Mix together all the ingredients in a large bowl, cover and leave to soak for 24 hours.
Step 2 of 4
Spoon the mixture into a 1.2 litre pudding basin, cover with a piece of nonstick baking paper that has been folded with a pleat and secure with string, then cover with foil.
Step 3 of 4
Steam the pudding for about 6 hours, keeping the water topped up in the saucepan so that it does not dry out. When cooked, rewrap the pudding in nonstick baking paper and foil. Store in a cool place until Christmas time.
Step 4 of 4
When ready to serve, steam the pudding for a further 2 hours as above. Serve hot with thick cream.
