  • 1kilograms Sunbeam mixed fruit
  • 3/4 cup Sunbeam glacé cherries
  • 3/4 cup Sunbeam walnuts
  • 1/2 cup Sunbeam blanched almonds, roughly chopped
  • 1 Granny Smith apple, peeled, cored, coarsely grated
  • 1/4 cup golden syrup
  • 1 cup orange-flavoured liqueur (see Tip)
  • 250grams unsalted butter, softened
  • 1 1/4 cups brown sugar
  • 4 free range eggs
  • 3 cups plain flour
  • 2teaspoons mixed spice
  • 1 orange, zested, juiced
  • 1teaspoons bicarbonate of soda
  • 2teaspoons pure icing sugar (to serve)

Try this delicious, spiced Christmas cake recipe for a classic Christmas dessert that's sure to bring holiday cheer.

Method

Step 1 of 5

Place mixed fruit, cherries, nuts, apple, syrup and liqueur in a large bowl and stir to combine. Stand, covered, for 8 hours or overnight to allow flavours to infuse.

Step 2 of 5

Preheat oven to 150ºC/130ºC fan-forced. Grease a 10-cup capacity bundt pan, making sure crevices are well coated.

Step 3 of 5

Using an electric mixer, beat butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well between each addition. Add flour and mixed spice, then beat until just combined.

Step 4 of 5

Place orange juice and bicarbonate of soda in a small bowl and stir to combine. Add juice mixture to butter mixture, then beat until just combined. Add zest and mixed fruit mixture, and beat until just combined. Spoon mixture into pan, pressing mixture into crevices. Smooth top.

Step 5 of 5

Bake for 2 hours 30 minutes or until a skewer inserted into centre comes out clean. Cool cake in pan for 1 hour before inverting into a wire rack to cool completely. Serve dusted with icing sugar.
