Description
Bite sized Christmas puddings with a white chocolate icing.
Method
Step 1 of 7
In a large mixing bowl, crumble up one dark fruit cake.
Step 2 of 7
Slowly add orange juice to the fruit cake bowl, using your hands to combine. You want the mixture to be damp enough to hold together but not too wet that it turns sloppy.
Step 3 of 7
Roll orange juice and cake mixture into desired sized balls. I usually do bite-sized and it gets me around 30 puddings. Place onto lined baking tray.
Step 4 of 7
Chop up some red and green lollies in preparation to put on after the icing. You will need 2 pieces of green and 1 piece of red per pudding to resemble holly.
Step 5 of 7
In a new bowl, melt some whites chocolate melting buttons and spoon onto the top of the puddings to ice.
Step 6 of 7
Gently place the red and green lollies on top of the icing to resemble holly.
Step 7 of 7
Refrigerate to set and that's it! Leave on the tray until set; then you can transfer to a container - best to keep them in the fridge to store!
