- 3 cloves garlic, finely chopped
- 3teaspoons sesame oil
- 6 white fish fillets
- 1/2 cup fresh coriander leaves
- 7 cm piece fresh ginger, peeled, finely shredded
- 6 spring onions, trimmed, cut into 10cm lengths, finely shredded
- 1/4 cup chicken stock
- 1/4 cup soy sauce
- 2tablespoons peanut oil
- 2tablespoons Chinese cooking wine

Method
Step 1 of 4
Preheat oven to 220°C. Line a roasting pan with foil, then with non-stick baking paper.

Pat fish fillets dry with paper towel. Place into the pan.
Step 3 of 4
Spread garlic and ginger over the fish. Combine soy, stock, cooking wine and sesame oil in a jug. Pour over the fish. Cover pan tightly with foil. Bake 15-20 minutes or until fish flakes easily when tested with a fork. Transfer to warm plates, reserving pan juices.
Step 4 of 4
Heat peanut oil in saucepan over medium heat until just smoking. Pour over fish along with pan juices. Top with spring onion and coriander to serve.
