- 1teaspoons sesame oil
- 500grams skinless firm white fish fillets, (such as saddletail snapper) (coarsely chopped)
- 450grams mixed frozen beans, broccoli and sugarsnap peas (broccoli and sugarsnap peas)
- 1 long red chilli (thinly sliced)
- 6 spring onions (thinly sliced)
- 300grams fresh ramen noodles
- 1/4 cup red curry paste
- 1 litre salt-reduced chicken stock
Method
Step 1 of 4
Process fish in a food processor until finely chopped. Add 2 tbs curry paste and half the onion. Season and pulse until just combined. Roll tablespoons of mixture into balls and set aside.
Step 2 of 4
Heat a large, non-stick saucepan over medium heat. Add remaining curry paste and half the remaining onion. Cook, stirring, for 1 minute or until fragrant.
Step 3 of 4
Add vegetables, stock and 2 cups water and bring to the boil. Reduce heat to low and simmer, uncovered, for 4 minutes, or until fish balls are almost cooked through.
Step 4 of 4
Add noodles and simmer for a further 1 minute or until noodles are tender and fish balls are cooked through. Serve soup sprinkled with remaining onion and chilli, and drizzled with sesame oil, if using, to taste.
