- 4 cloves garlic, roughly chopped
- 2 small red chillies, roughly chopped
- 9 long red chillies, roughly chopped
- 1 bunch coriander, stems and roots only, roughly chopped
- 4 cm piece ginger, peeled, sliced
- 2tablespoons honey
- 1/2 cup apple cider vinegar
- 6 medjool dates, pitted, chopped

Method
Step 1 of 2
Roughly chop coriander stems and roots. Combine in a small food processor with garlic, ginger and chillies and process until finely chopped. Add dates and process until well combined.
Step 2 of 2
Transfer to a small saucepan. Stir in vinegar, honey and 11/4 cups water. Bring to the boil over medium heat, then simmer for 20-25 minutes, stirring occasionally, until sauce has reduced and thickened to desired consistency. Use as a dipping sauce for fish cakes or dim sims, or add lime juice and use as a salad dressing.
