  • 1tablespoons Woolworths extra virgin olive oil
  • 1 brown onion, finely chopped
  • 3 garlic cloves, crushed
  • 2teaspoons Mexican chilli powder
  • 500grams Woolworths lean beef mince
  • 400grams can finely chopped tomatoes
  • 2tablespoons tomato paste
  • 420grams can no added salt red kidney beans, rinsed, drained
  • 4 Woolworths free range eggs
  • coriander leaves (to serve)
  • 1packets warmed flour tortillas (to serve)

Description

Warm up with a big bowl of flavour-packed chilli con carne, with a twist. This delicious easy dinner idea is made even better with eggs, and is ready in 30 minutes.

Method

Step 1 of 3

Heat oil in a large flameproof roasting pan over medium-high heat. Add onion and garlic, then cook, stirring, for 4 minutes or until onion has softened. Add chilli powder and cook, stirring, for 1 minute or until fragrant.

Step 2 of 3

Add mince and cook, breaking up lumps with a wooden spoon, for 5 minutes or until browned. Stir in tomatoes, paste, beans and 1/4 cup water. Reduce heat to medium and simmer, stirring occasionally, for 10 minutes or until mixture thickens. Season.

Step 3 of 3

Using the back of a spoon, make four indents in mince mixture. Crack one egg into each indent, then cook, covered, for 2 minutes or until eggs are cooked to your liking. Scatter over coriander and serve with tortillas.
