  • 1/2 bunch coriander, chopped
  • 1 brown onion, diced
  • 1 medium sweet potato, peeled and cut into wedges
  • 200grams cherry tomatoes, halved
  • 1 medium zucchini, finely grated
  • 1teaspoons ground coriander
  • 1tablespoons cumin
  • 260grams lean beef mince
  • 2teaspoons olive oil
  • 3 cup light Greek-style yoghurt

Method

Step 1 of 5

Preheat oven to 180°C. Line a baking tray with baking paper.

Step 2 of 5

Toss sweet potato wedges with 1 tsp of olive oil spread on prepared tray. Bake for 20 minutes, flipping halfway through, until golden.

Step 3 of 5

Heat remaining olive oil in a non-stick pan over medium heat. Sauté onion and zucchini until translucent. Add mince and cook for 2-3 minutes or until cooked through.

Step 4 of 5

Add spices and stir to combine. Add tomato paste and cook until thickened.

Step 5 of 5

Top wedges with mince, yoghurt and tomatoes. Sprinkle with coriander to serve.
