- 1 red capsicum, deseeded, sliced
- 200grams swiss brown mushrooms, sliced
- 2 large wholemeal Lebanese bread
- 1 cup baby rocket salad
- 1 cup mozzarella, grated
- 400grams can diced tomatoes with basil and oregano

Method
Step 1 of 4
Preheat oven to 240°C. Place 2 baking trays into oven.
Step 2 of 4
Place bread on 2 sheets of baking paper
Step 3 of 4
Mash tomatoes in a bowl with a fork. Spoon onto bread and spread evenly. Top bread with mushroom, cheese and capsicum.
Step 4 of 4
Slip baking paper with pizzas onto hot trays and return to oven. Bake for 10 minutes or until cheese is melted and bases are crisp. Top with rocket and serve with a mixed green salad.
