  • 1/2 bunch parsley (plus extra to serve)
  • 200grams cherry tomatoes, halved
  • 2 cans cannellini beans, drained
  • 4 slices Woolworths light tasty cheese
  • 1 cup baby spinach leaves
  • 4 slices Woolworths wholemeal bread, toasted
  • 1tablespoons olive oil
  • 2 clove garlic, crushed

Method

Step 1 of 4

Heat olive oil in a saucepan over medium heat. Add garlic and sauté for 1-2 minutes or until just starting to colour.

Step 2 of 4

Add tomato paste and stir until heated through, then gently fold in beans and parsley.

Step 3 of 4

Add spinach leaves and stir to wilt. Turn off heat. Season to taste with pepper.

Step 4 of 4

Place cheese slices on toast and top with bean mixture. Top with cherry tomatoes and parsley sprigs to serve.
