  • 1 cup Macro bulgur wheat
  • 1 lemon
  • 2 clove garlic
  • 1 1/2 cup frozen baby peas
  • 2 Italian tomatoes
  • 1.50kilograms slightly firm tofu, 3 packets

Method

Step 1 of 2

Heat oil in a large saucepan over medium heat. Add garlic and onion and sauté for 2 minutes. Add bulgur wheat and paprika and cook, stirring, for 1-2 minutes. Add three cups of water, stir well, cover and cook for 7 minutes. Stir through tomatoes and cook, uncovered, for a further 15-20 minutes or until bulgur wheat is tender.

Stir through peas, capsicum and tofu and season with pepper. Cook for a further 2 minutes or until tofu and vegetables are warmed through. Sprinkle with parsley and serve with lemon wedges.
