  • 500grams Woolworths Italian style fennel pork sausages
  • 1tablespoons extra virgin olive oil
  • 1 brown onion, halved, thinly sliced
  • 3 clove garlic, thinly sliced
  • 2 cup salt-reduced chicken stock
  • 800grams canned cannellini beans, rinsed, drained
  • 120grams baby spinach leaves
  • 20grams parmesan, finely grated
  • 1/4teaspoons dried chilli flakes (to serve)
  • 1 white sourdough loaf (to serve)

Description

A winter warming sausage stew full of greens with a deep flavour and silky finish. Try this one-pot stew recipe for an easy comforting dinner.

Method

Step 1 of 4

Squeeze sausage mince from casings. Discard casings and break mince into chunks.

Step 2 of 4

Heat oil in a large saucepan over medium-high heat. Cook mince, stirring occasionally, for 10 minutes or until well browned. Using a slotted spoon, transfer to a heatproof bowl.

Step 3 of 4

Reduce heat to medium. Cook onion, stirring, for 4 minutes or until softened. Add garlic and cook for 1 minute or until fragrant. Return mince to pan with stock and beans, then bring to the simmer. Simmer, covered, for 10 minutes or until slightly thickened. Remove pan from heat. Reserve ¼ cup spinach, then stir remaining spinach into stew.

Step 4 of 4

Sprinkle stew with reserved spinach, parmesan and chilli flakes. Serve with bread.
