  • 5tablespoons soy sauce (reduced salt)
  • 5tablespoons mirin
  • 4tablespoons rice wine vinegar (divided)
  • 2tablespoons honey (divided)
  • 500grams chicken thighs (skinless, boneless, sliced)
  • 5 spring onions (sliced into 3, divided)
  • 1 large carrot (peeled and sliced into matchsticks)
  • 50grams radishes (thinly sliced)
  • 100grams cabbage (shredded)

Description

Sticky yakitori chicken skewers work perfectly with crunchy and fresh Japanese slaw.

Method

Step 1 of 4

Soak 4 skewers in water. Place the soy sauce, mirin, half of the rice wine vinegar and most of the honey (reserve a teaspoon) in a small saucepan on medium heat and cook for 8-10 minutes until reduced slightly.

Step 2 of 4

Thread the skewers with chicken and half of the spring onions and heat a griddle pan on medium heat. Place the chicken skewers in the pan, brush well with the sauce and cook for 10 minutes, turning occasionally and brushing on more sauce.

Step 3 of 4

Slice the remaining spring onions into matchsticks, add to a medium bowl with the carrots, radishes and cabbage, whisk together the remaining rice wine vinegar and honey, pour over the vegetables and toss to coat.

Step 4 of 4

Serve the skewers with slaw.
