- 450grams king prawns, raw, peeled, deveined
- 2teaspoons lemongrass paste
- 1tablespoons fish sauce
- 1 large lime, juice and zest
- 1 bunch coriander, fresh, chopped
- 1teaspoons honey
- 1 red chilli, finely diced
- 3tablespoons coconut flakes (to serve)

Description
These aromatic prawn skewers make a quick and easy starter or light lunch.
Method
Step 1 of 2
Soak 8 skewers in cold water. Place the prawns in a shallow dish. Mix the coconut milk, lemongrass paste, fish sauce, lime juice and zest, coriander stalks, honey and red chilli together and pour over the prawns. Cover and set aside for 1 hour.
Step 2 of 2
Heat the BBQ to the highest setting. Thread the prawns onto the skewers and brush with marinade. Grill for 2 minutes on each side or until cooked through. Serve with fresh chopped coriander and coconut flakes scattered on top.
