- 500grams La Molisana pastifico extra di lusso farfalle rigate no 66
- 1tablespoons extra virgin olive oil
- 250grams Woolworths RSPCA Approved chicken breast stir-fry
- 1 lemon
- 190grams La Molisana pesto al basilico
- 250grams cherry tomatoes, quartered
- 60grams baby spinach & rocket
Description
This budget-friendly twist on a classic pasta salad makes a satisfying weeknight meal with tender chicken, tangy pesto and juicy cherry tomatoes.
Instruction tip
Ensure that the pasta and chicken are cold or the spinach will wilt.
Method
Step 1 of 4
Cook pasta in a large saucepan of boiling water for 10 minutes or until tender. Drain, reserving 2 tbs cooking water. Rinse pasta under cold water. Drain well.
Step 2 of 4
Meanwhile, heat oil in a large frying pan over medium-high heat. Add chicken. Cook for 2 minutes each side or until cooked through. Transfer to a large plate. Cut any large pieces in half.
Step 3 of 4
Finely grate lemon zest. Cut lemon in half. Juice 1 half, then cut remaining half into wedges. Whisk pesto, juice and reserved cooking water in a large bowl. Add tomato, leaf mix, pasta and chicken. Toss to combine.
Step 4 of 4
Divide among serving bowls. Top with zest. Serve with lemon.
