  • 250grams egg tagliatelle
  • 500grams tomatoes
  • 1 red capsicum
  • 1 onion
  • 4 clove minced garlic
  • 1teaspoons dried italian herbs
  • 250grams mascarpone cheese
  • 3 leaves fresh basil, chopped
  • 150grams cheese, finely grated
  • 2teaspoons olive oil

Method

Step 1 of 6

Cook pasta as per pkt directions then drain.

Step 2 of 6

While pasta is cooking, add oil to a large frypan, add diced onion, capsicum and sauté until soft

Step 3 of 6

Add chopped tomatoes, garlic and cook over medium heat for 5 mins until they cook down to make a chunky tomato sauce.

Step 4 of 6

Add the herbs, salt, pepper & sugar if using this as optional. Stir thoroughly.

Step 5 of 6

Add mascarpone and chopped basil. Stir until cheese has melted to make a creamy sauce.

Step 6 of 6

Place the pasta into the pan with the sauce and mix well. Serve with finely grated cheese if you want. Serve with salad or fresh crusty bread.
