- 1teaspoons olive oil
- 1 piece chorizo, chopped
- 1 piece chicken breast, cut into strips
- 690grams Leggo Gourmet Rich Passata
- 400grams pasta, elbows
- 3 cups chicken stock
- 1 piece small red capsicum, cut into strips
- 3teaspoons fresh oregano
- 60grams baby spinach leaves
- 2 pinches freshly grated parmesan cheese (to serve)
Instruction tip
Add extra vegetables to your liking such as zucchini, baby onions or chopped mushrooms.
Method
Step 1 of 3
Heat oil in a large non-stick saucepan over high heat. Cook chorizo for 2 minutes or until browned. Stir in chicken and cook for 3 minutes or until just starting to colour, stirring regularly.
Step 2 of 3
Reduce heat to medium. Add Leggo's Gourmet Passata, pasta, stock, capsicum, oregano and stir to combine. Bring to a gentle simmer and stir for 8 minutes until pasta is just cooked.
Step 3 of 3
Remove from heat and stir in spinach. Garnish with oregano and serve with parmesan cheese.
