  • 1.50kilograms chicken drumsticks
  • 0.50kilograms red washed potatoes, cut into wedges
  • 1tablespoons extra virgin olive oil
  • 2tablespoons dijon mustard
  • 1 red onion, cut into wedges
  • 2 lemons, 1 lemon zested and juiced, 1 cut into rounds
  • 1/2 bunch continental parsley, leaves picked

Description

This crowd-pleasing traybake is a fail-safe midweek meal option. Winner, winner, chicken dinner!

Method

Step 1 of 3

Preheat oven to 200°C/180°C fan-forced. Line a large baking dish with baking paper.

Step 2 of 3

Add to a large bowl chicken drumsticks, potato, oil, dijon, onion, lemon zest and juice. Season well and toss to combine. Transfer to baking dish.

Step 3 of 3

Bake for 30 minutes. Remove from oven, toss pieces, and add lemon rounds to dish. Bake for a further 30 minutes, or until drumsticks are golden and cooked through and potatoes are tender. Top with parsley. Serve.
