- 420grams corn kernels, drained
- 500grams Woolworths beef mince
- 2 cloves garlic, crushed
- 35grams Woolworths taco seasoning mix
- 250grams Woolworths microwave long-grain white rice, heated
- 420grams no-added-salt black beans, rinsed, drained
- 1 avocado
- 150mL Woolworths light sour cream
- 1 tomato , finely chopped
- 2 spring onions, thinly sliced
- 1/4 bunch coriander, sprigs picked
- 1tablespoons extra virgin olive oil
Description
Spice up your weeknight dinner routine with this easy one-pan Mexican rice, where budget-friendly meets bold flavours in every bite.
Method
Step 1 of 4
Heat 2 tsp oil in a large non-stick frying pan over medium-high heat. Add corn and cook, stirring occasionally, for 2 minutes or until golden. Transfer to a bowl.
Step 2 of 4
Add beef to pan and cook, stirring to break up any lumps, for 2 minutes or until browned. Stir in garlic and cook for 30 seconds or until fragrant. Return corn to pan. Add seasoning mix and cook, stirring occasionally, for 1 minute or until combined.
Step 3 of 4
Add rice to pan. Cook, stirring, for 2 minutes or until combined. Stir in beans. Cook for 1 minute or until heated.
Step 4 of 4
Cut avocado into thin wedges. Top Mexican rice with sour cream, avocado, tomato, onion and coriander.
