- 1 onion, peeled and quartered
- 4 skinless chicken breast fillets
- 2 cloves garlic, peeled and halved
- 2 fresh hot red chillies, deseeded
- 1 handful fresh coriander, finely chopped
- 1 pinch salt
- 1 pinch freshly ground black pepper
- 1tablespoons plain flour
- 1 egg

Method
Step 1 of 3
Put the onion, chicken, garlic, chillies, and coriander in a food processor. Season with salt and pepper, and pulse until combined - be careful not to turn into a paste. Tip the mixture out into a bowl, and mix in the flour and egg.
Step 2 of 3
Using your hands, scoop a small handful of the mixture, roll, then flatten into a burger. Repeat until all the mixture has been used. Chill for 30 minutes to firm up.
Step 3 of 3
Heat the barbecue or charcoal grill until hot. Grill the burgers over a medium heat for 8-10 minutes on each side until golden and cooked through. Serve with lemon mayonnaise and fresh tomato slices.
