  • 60grams butter, melted
  • 1 1/2 cup milk
  • 125grams shortcut bacon, diced
  • 125grams can corn kernels, drained
  • 1 egg
  • 2 cup tasty cheese, grated

Method

Step 1 of 4

Preheat oven to 200°C. Grease a medium 12 hole muffin tray.

Step 2 of 4

Fry bacon in a non-stick frying pan for 3 minutes until crisp. Cool.

Step 3 of 4

Sift flour into a bowl, add cheese and stir to combine. Whisk milk, egg and butter together. Add to flour with corn and bacon and mix quickly and lightly together.

Step 4 of 4

Divide mixture between muffin holes. Bake for 20 minutes until golden. Cool on wire rack.
