- 2 cup self raising flour
- 1 cup skim milk (standard milk can be used)
- 1 carrot, coarsely grated
- 125grams can corn kernels, drained
- 120grams tasty cheddar cheese, cut into 12 cubes
- 1/4 cup olive oil
- 1 egg
- 1 cup tasty cheese, grated
- 1/2 cup frozen baby peas

Preheat oven to 200°C. Grease a 12 hole medium muffin tin.

Sift flour into a large bowl and stir in grated cheese and vegetables.
Step 3 of 4
Whisk milk, oil and egg together in a jug. Pour into flour mixture and mix together until just combined.
Step 4 of 4
Spoon mixture evenly into the muffin tin. Push a cube of cheese into each; making sure it is covered with mixture. Bake for 25 minutes or until golden.
