- 1/2 cup milk
- 1 egg
- 1/2 cup frozen peas and corn
- 1/2 cup chopped spinach
- 1 chopped onion
- 1/4 cup chopped pumpkin
- 1/4 cup grated zucchini
- 1/2 cup shredded cheese

Description
Add vegetables into this muffin mixture. The kids will love them without knowing they are filled with healthy vegetables.
Method
Step 1 of 4
Turn oven on at 180 degrees. Sift self-raising flour into a bowl.
Step 2 of 4
Add all other ingredients, except for the pumpkin, and mix well.
Step 3 of 4
Add the pumpkin and gently mix. You don't want to mash the pumpkin, so be careful when mixing it in with the other ingredients.
Step 4 of 4
Spray muffin tin with Olive Oil. Spoon into 12 cup muffin tray. Cook at 180 for 20 mins.
