  • 2tablespoons fresh flat-leaf parsley, chopped
  • 1 cup sweet potato, cooked, mashed
  • 5milliliter canola cooking spray
  • 2tablespoons sesame seeds
  • 400grams can chickpeas no added salt, rinsed, drained
  • 2tablespoons quinoa flakes

Method

Step 1 of 2

Preheat oven to 160ºC. Line a baking tray with baking paper. Process chickpeas, sweet potato, quinoa flakes and parsley in a food processor until well combined.

Step 2 of 2

Roll rounded tablespoons of mixture into 18 balls. Place sesame seeds on a plate and roll balls in seeds to lightly coat. Place balls on prepared tray. Spray lightly with oil and bake for 15-20 minutes or until golden, turning halfway through cooking time. Set aside to cool.
