- 1/4 cup desiccated coconut
- 250grams strawberries, hulled
- 10 fresh dates, pitted
- 2 cup raw cashew nuts
- 2tablespoons white chia seeds
- 1tablespoons coconut oil

Method
Step 1 of 2
Process cashews in a food processor until finely chopped. Transfer to a bowl. Add dates to processor and pulse until finely chopped. Add strawberries and pulse until chopped. Return cashews to the processor with oil and seeds. Process until combined.
Step 2 of 2
Line a tray with baking paper. Place coconut in a bowl. With slightly damp hands, roll tablespoons of mixture into balls. Toss in coconut to coat. Place on tray and repeat with remaining mixture. Chill for 1-2 hours before serving.
