  • 800grams Woolworths COOK slow cooked beef ribs in sweet ’n’ smokey BBQ sauce
  • 200grams Solanato tomatoes, roughly chopped
  • 1/2 small red onion, roughly chopped
  • 1/2 bunch coriander, leaves picked
  • 2tablespoons chipotle in adobo sauce
  • 500milliliter salt-reduced chicken stock
  • 12 mini corn tortillas
  • 2 1/2 cups Mexican-style shredded cheese
  • 2 limes, cut into wedges

Description

Slow-cooked beef ribs are the hero of this birria-inspired recipe. These deliciously sticky ribs are paired with cheese and baked inside soft tortillas.

Birria is a slow-cooked soup or stew. This speedier version, which is enclosed in tortillas, uses ribs that have been pre-cooked for 10 hours.

Method

Step 1 of 5

Reserve sauce sachet from beef ribs packet, then microwave ribs according to packet instructions.

Meanwhile, combine tomato, onion and coriander in a medium bowl.

Add beef to a large pot with reserved sauce, chipotle and stock. Bring to a simmer, then remove pan from heat. Remove meat from ribs, then roughly shred using 2 forks. Discard bones.

Step 4 of 5

Heat a large frying pan over medium-low heat. Dip 1 tortilla, at a time, into sauce mixture to coat. Lay tortilla in pan, then place 1/4 cup beef and 1/4 cup cheese on one half of the tortilla. Fold in half to enclose. Repeat with 1 more tortilla. Cook tortillas for 2 minutes on each side, or until tortillas are crisp. Repeat with remaining tortillas, beef and cheese.

Top tacos with salsa, then serve with remaining sauce mixture.
