- 2tablespoons basil leaves (to serve)
- 800grams cauliflower florets, trimmed, chopped
- 1 small red onion, thinly sliced
- 2teaspoons dried oregano
- 5milliliter extra virgin olive oil spray
- baby rocket (to serve)
- 1 1/2 cup pizza cheese blend, grated
- 2 eggs, lightly whisked
- 1/2 cup passata
- 10 solanato tomatoes, halved
- 12 slice hot salami, shaved
Method
Step 1 of 4
Process cauliflower in a food processor until finely chopped. Transfer to a microwave-safe bowl. Cover and microwave on high for 8 minutes or until tender. Drain any liquid. Add egg, oregano and half of the cheese and mix to combine.

Preheat oven to 220°C. Line two 30cm pizza trays with baking paper.
Step 3 of 4
Divide the cauliflower mixture in half and press one portion onto the tray. Spray with oil and bake for 20 minutes or until golden.
Step 4 of 4
Spread half the passata over the base and sprinkle with half the remaining cheese, salami, onion and tomato. Bake for 10 minutes or until golden. Repeat with remaining cauliflower mixture and toppings to make the second pizza. Garnish with rocket and basil. Cut into wedges to serve.
