- 675grams pork tenderloin, in one piece
- 1tablespoons olive oil
- 1 knob butter
- 1 handful pecan nuts
- 1 handful dried apricots, halved
- 1tablespoons whisky
- 1 1/4 cup double cream

Method
Step 1 of 3
Preheat the oven to 200°C (Gas 6). Rub the brown sugar over the pork, then slice the pork horizontally into medallions.
Step 2 of 3
Heat the oil and butter in a frying pan over a medium-high heat. Brown the pork medallions for 3-4 minutes on each side until golden. Add the pecans and apricots, and cook for a few more minutes.
Step 3 of 3
Increase the heat to high, and add the whisky (if using). Let it simmer for a couple of minutes until the alcohol has evaporated. Reduce the heat to medium, pour over the cream, and let it simmer for a few minutes more. Serve hot with mashed potato.
