- 1/2 cup cornflour
- 1 quantity caramel
- 2/3 cup plain flour
- 2tablespoons icing sugar (to dust)
- 250grams butter, at room temperature
- 1teaspoons vanilla extract
- 1/2 cup brown sugar, firmly packed
- 1/2teaspoons salt

Method
Step 1 of 3
Preheat oven to 160°C. Line 2 baking trays with baking paper. Beat butter, sugar and vanilla in the bowl of an electric mixer until light and creamy. Sift flours and salt together into butter mixture and stir until combined. Stand for 30 minutes.
Step 2 of 3
Roll tablespoonfuls of mixture into balls and place onto prepared trays, 4cm apart. Press tops lightly with a fork. Bake for 15 minutes or until firm. Cool on trays.
Step 3 of 3
Spread a thick layer of caramel onto half the biscuits. Top with remaining biscuits. Dust with icing sugar and serve.
