  • 4 pieces white corn tortillas
  • 1 1/2 cups refried beans
  • 2teaspoons Masterfood Cafe Style Everything Eggs
  • 4 pieces eggs
  • 1tablespoons olive oil
  • 1 piece avocado, sliced (to serve)
  • 2tablespoons salsa (to serve)
  • fresh coriander (to serve)

Method

Step 1 of 5

Preheat oven to 180 degrees. Brush each side of the tortilla with oil and place on a lined oven proof tray. Bake for 10 minutes until crisp.

Heat the beans.

Step 3 of 5

Heat a glug of olive oil in a large frying pan over a medium heat. Crack the eggs into the pan and cook for 4 minutes until the white is solid and the yolk is cooked but still runny.

Step 4 of 5

Spread the beans on top of the tortilla, top each with a fried egg and sprinkle generously with the Master foods Cafe style Everything Eggs Blend.

Step 5 of 5

Add avocado slices, a dollop of salsa and some fresh coriander.
