Blueberry Yoghurt Popsicles

- 250grams blueberries
- 2 cups Greek-style natural yoghurt
- 1tablespoons honey
- 8 cardboard cups
- 8 popsicle sticks
Description
With just three ingredients (fresh blueberries, Greek-style natural yoghurt and honey), you'll have a sweet treat at the ready. Raise your popsicle and chill out.
Method
Step 1 of 3
Place blueberries and 2 tbs water in a small saucepan over medium heat. Cook for 3 minutes or until jammy, squashing with a fork as the blueberries cook. Remove from heat and set aside to cool slightly.
Step 2 of 3
In a small bowl, add yoghurt and honey and stir to combine. Add blueberry mixture and gently fold to swirl through.
Step 3 of 3
Divide amongst 8 cardboard cups. Tap cups on bench to remove air bubbles and distribute mixture. Insert a small popsicle stick into each cup Freeze for 4 hours or until set. Serve.
