  • 2tablespoons olive oil
  • 4tablespoons white wine vinegar
  • 1teaspoons chilli powder
  • 1teaspoons garlic powder
  • 1/2teaspoons lime juice
  • 2teaspoons coriander
  • 160grams sweetcorn, drained
  • 2tablespoons butter
  • 2 medium roma tomatoes, chopped
  • 2 medium shallots, sliced
  • 160grams black beans, drained

Description

Plenty of bite in this salad enchanced by the flavour of smoked chilli.

Method

Step 1 of 3

Heat up an pan to a medium heat and fry the drained sweetcorn with the butter on the pan while tossing for 6 minutes or until the corn starts to brown.

Step 2 of 3

Remove from the heat and allow to cool while you prepare the rest of the ingredients. Combine your dressing ingredients by mixing well in a serving dish and set to one side.

Step 3 of 3

Cook the black beans as per tin instructions and then drain and set to one side. Combine all your ingredients together and serve with the dressing on the side or combined if you wish.
